So for all those who are considering replacing the OEM head unit, or looking to fault find, here is a website which will allow you to easily determine which wire does what on your specific Z3 model.
When you access the website, you will see a list of BMW models on the right - scroll down until you find the year and z3 model relevant to your requirements, click on ir and you'll get a list like the pic I have attached.
It also provides a link to source adapters which interface between the OEM plug and the new head unit you
want to install..
